1 cup butter
2 cups powdered sugar
4 squares unsweetened chocolate, melted
3/4 teaspoon peppermint flavoring
2 teaspoons vanilla
1 cups vanilla wafer crumbs
Using an electric mixer beat butter and powdered sugar together until light and fluffy.
Add melted chocolate and continue beating.
Add eggs and beat in.
Put 1/2 of the crumbs into 18 cup cake cups, lined with paper liners.
Spoon in chocolate mixture, dividing evenly.
Top with remaining crumbs. Freeze until firm.
To serve, remove from paper liners. Put each into a dessert dish.
Top with sweetened whipped cream and a cherry.
This requires much beating time, and patience filling the cups, but if you plan ahead, you will feel like this is a "show-off" dessert and ready when you are. Handy for drop-in guests.
After they are frozen firmly it saves space to transfer them from the pan to a resealable plastic bag and keep frozen.
