Make this recipe a day ahead.
4 or 5 Irish potatoes, peeled and sliced. Cook until tender.
1 bunch green onions, sliced, include green parts.
8 ounces sour cream
8 ounces mayonnaise
1/4-cup minced dill pickles mixed with sour cream and mayo
6 slices bacon, fried, drained and crumbled
Arrange in large glass bowl in alternate layers: potatoes and onions, then add mixture of sour cream, mayonnaise and pickles. Sprinkle bacon bits on top.
Serve the next day. Mix gently just before serving.
