• 1-1/4 cups boiling water

• 1 cup quick oatmeal

• 1/2 cup shortening

• 1 cup brown sugar

• 1 cup white sugar

• 2 eggs, beaten

• 1 teaspoon vanilla

• 1-1/2 cups flour

• 1 teaspoon cinnamon

• 1 teaspoon soda

Cream together sugars and shortening. Add the beaten egg and vanilla. Mix together the dry ingredients and add, along with the water to the oatmeal combination.

Set oven to 375 degrees. Grease and flour two nine-inch layer pans. Pour 1/2 of the batter in each pan. Bake 35- to 40-minutes. Turn onto racks to cool completely before frosting.

Frosting

• 1 eight-ounce block of cream cheese, softened

• 1/4 cup butter, softened

• 1 pound powdered sugar

• 2 teaspoons vanilla

• 2 cups chopped pecans

Cream together cream cheese and butter. Blend in sugar, vanilla and nuts. Spread half over one layer. Top with second layer. Let center frosting ooze out a little.
