4 quarts peaches, peeled and finely chopped

1 cup golden raisins

1 cup finely chopped onions

1 clove minced garlic

2-1/2 cups brown sugar

5 cups cider vinegar

1/4 cup mustard seed

2 Tablespoons ground mustard

1 jalapeno, seeds removed (wear gloves)

2 teaspoons salt

Combine all ingredients. Simmer for 40 minutes or until thick. Sterilize seven pint jars. Pour boiling hot chutney into sterilized jars, leaving 1/4 inch headspace in each jar. Attach hot lids and rings. When cool, check seal.
