Make spice mix first:

2 teaspoons salt

2 teaspoons garlic powder

2-1/2 teaspoons paprika

1 teaspoon black pepper

1 teaspoon onion powder

1/2 teaspoon cayenne

1-1/4 teaspoon dried oregano

1-1/4 teaspoon dried thyme

Stir together and store in an airtight container.

Preheat oven to 325 degrees. Use the seeds from one or more pumpkins. Wash as much pulp as you can from the seeds. Add three teaspoons olive oil, salt, if desired. Mix the oil and seeds on a cookie sheet with edges. Generously sprinkle with Cajun spice, stir to coat both sides.

Bake 25 minutes if in a single layer. Multiple layers will take longer. Stir about every five or 10 minutes. Taste, and add more seasoning if desired.
