7 1/2 cups chopped sweet onions (Walla Walla Sweets )

4 tablespoons butter

1 tablespoon raw rice

5 cups boiling water

3/4 cup grated Swiss cheese

2/3 cup half and half cream

Sauté onion in butter.

Cook rice in water for 5 minutes.

Drain and mix with onion. Stir in cheese, cream and salt to taste.

Cover and bake at 300 degrees for one hour in glass baking dish.

Serves eight.
