Never a dull moment

2 packages 16-20 count prawns

1 pound boneless chicken breast, butter for browning

2 stalks lemongrass, cut into 2-inch diagonal pieces for most flavor.

1 tablespoon minced garlic

1 tablespoon basil

1 tablespoon red chili oil

1 bottle SAN J THAI BRAND peanut sauce

1 cup peanut butter

2 cans coconut milk

2 cans bamboo shoots

2 packages Yaki Soba noodles

Boil prawns with seafood spice if your choice, till pink. Cool. Shell and de-vein.

Brown chicken cubes in butter. Add next four ingredients. Saute briefly. Stir in next four ingredients.

Heat all together.

Put noodles in boiling water to separate. Drain and rinse. Put into warm soup dish and ladle soup over top.

Garnish with chopped peanuts.

Four cups of cooked rice may be substituted for the noodles.
