1 No. 1 tall can of pink salmon, drained and flaked

1 cup uncooked macaroni noodles

1 cup creamed cottage cheese

1 cup sour cream

1 small onion, minced

2 tablespoons fresh chopped parsley

1/2 tsp. salt

1/8 tsp. pepper

Cook macaroni in boiling salted water until almost tender, and drain. Combine macaroni with remaining ingredients, and blend thoroughly. Pour into greased 2-quart casserole dish and top with buttered crumbs, crushed corn flakes, or paprika.

Bake in preheated oven at 350 degrees for 35-40 minutes.

If you don't have a can of salmon handy, the recipe is a great BASIC. Consider adding hot or cold toppings instead of including salmon. I think of: (1) smoked fish, (2) crisp bacon and chopped tomatoes, (3) ham and finely chopped broccoli, (4) bay shrimp and avocado cubes with green onion slices, or (5) your favorites.
